I like gin and tonics as much as the next girl. In fact, I probably like them more than the next girl if you'll serve me Hendrick's. But sometimes it's time for a change, something a little fancier, fruity without being sickly sweet. And this cocktail is the answer. Bonus points for the fact that it tastes (almost) as good without the gin for anyone not imbibing!

1 ounce Popol Raspberry Vinegar
1 tablespoon honey
1 ½ ounces gin
In a tall glass, stir together vinegar, gin, and honey. Add mint and muddle lightly just to release flavour.
Fill glass with ice and top with soda water.
