They require nothing less than perfect growing conditions; only a trained animal can find them (or those crazy enough to follow swarms of flies); and once harvested have to be consumed immediately as they lose 10% of their potency every day. So it makes sense that until now it has been exceptionally difficult to get your hands on fresh truffles in Vancouver (and if you could the express shipping costs would put you in the poor house).
